Delta 2 Health Department Review Comments: Comment Response The facility shall meet al the Rules Governing the Acknowledged Sanitation of Restaurants and Other Foodhandling Establishments,hereinafter referred to as 15A NCAC 18A section.2600 and the NC Food Code Manual 2009. It is the responsibility of the owner or operator to meet all building codes, zoning ordinances,fire,tax and other laws, rules,and ordinances applicable to the food service operation.. Nothing in these rules shall be interpreted to exempt any food service operation from the rules or ordinances of other agencies. Foodservice equipment is to meet current NSF Acknowledged standards or equivalent. Sinks must be provided with splash back protection and integral drainboards. Toasters, mixers,and microwave ovens are not required to meet NSF standards. Food preparation sinks must meet current NSF Acknowledged standards with a minimum recommended compartment size of 18'x 21"x 14",with one 24" integral drainboard will be required. A three compartment sink must meet current NSF Acknowledged standards,with a aminimum recommended compartment size of 18"x 21"x 14",with 24" integral drainboards on each end. Please note that special washing techniques must be used when using a two compartment sink. Must use a detergent sanitizer in both compartments of the sinks and must batch wash. Splash partitions should not be attached directly to equipment in the field, unless the installation is performed by an NSF certified fabricator. If hot water heating does not meet required temps during permitting,then it is up to contractor or owner to fix to meet the required temperature. If hot water heater changes during construction or remodeling, please notify this department to ensure proper size. A minimum of 36 inches of aisle clearance should Acknowledged be allowed for working area. Storage area adequate to the needs of the facility Acknowledged shall be provided. All storage is to be on shelves a minimum of 12 inches from the floor and 1" off the wall on stationary storage units or 6 inches (15.24cm.)above the floor when placed on portable storage units or otherwise arranged so as to permit thorough cleaning. For purposes of this Rule the term "portable"does not require wheels. All shelving shall meet current NSF standards. Sufficient refrigeration and freezer capacity shall Acknowledged be provided for the storage of potentially hazardous foods. Walls in kitchens and other rooms used for the Acknowledged preparation of food and the washing of utensils shall be smooth and washable. Acceptable wall materials include fiberglass reinforced panels, stainless steel,wall board painted with washable, nonabsorbent paint, and brick,cinder blocks, slag blocks,or concrete blocks, if glazed,tiled, plastered or filled so as to provide a smooth surface. Test kits must be available for testing the chemical sanitizer being used to insure minimum prescribed strengths. Refrigerators shall be equipped with an accurate Acknowledged air-temperature thermometer. Stem type thermometers shall be provided for monitoring food temperatures. These temperatures should have a range of 0°F-220°F. Lighting in food preparation, storage,behind bar& Acknowledged waitress and display areas shall be shielded or shatterproof so as to preclude the possibility of glass from broken bulbs falling into food. All areas in which food is handled,prepared or in which utensils are washed shall be provided with a minimum of 50 foot-candles of light at 30 inches from the floor. A minimum of 10 foot-candles of light at 30 inches from the floor shall be provided in all other areas including storage rooms and walk- in units. A minimum 20 foot-candles at surfaces where food is provided for customer self-service such as buffets and salad bars or where fresh produce or packaged foods are sold or offered fro consumption, inside of reach-in and under-counter units and 30 inches above the floor in areas used for handwashing,warewashing and equipment and utensil storage and in toilet rooms. This shall not include the dining areas except during cleaning activities. Appropriate backflow or backsiphonage prevention Acknowledged device installed on a water supply system shall meet A.S.S.E standards for construction, installation,maintenance, inspection and testing for that specific application and type of device. This includes any type of beverage dispensing mechanism. Prior to the issuance of a permit,the facility shall Acknowledged be in such condition so that immediate commencement of operation is possible. This shall include: • All cleaning and sanitizing of equipment complete. • All equipment installed and operating according to manufacturer's requirements and those in 15 A NCAC 18A section .2600. • All storage according to 15A NCAC 18A section.2600 and all food and surpplies stored 12"above the floor on stationary storage units or 6 inches (15.24 cm)above the floor when placed on portable storage units or otherwise arranged so as to permit thorough cleaning. For purposes of this Rule the term "portable"does not require wheels. A final inspection by this department must find that Acknowledged the establishment meets all those requirements in I 5A NCAC 18A.2600 including those which may arise during construction or renovation.
