All of the pits and auger borings that were evaluated were provisionally suitable for an onsite system. In order to proceed with the work for permitting, we will need to know the number of seats the facility is going to have. We will also need to work with Catawba county in developing the proposed gallons per day and the aspects of the system such as grease trap, etc.. Modifications are needed to the kitchen, which includes cooking, food-prep, and washing areas. Our office must ensure that any and all work you do to the kitchen meets current state rules for permitting as a permanent food service establishment, not a temporary food establishment. Plans for your proposed kitchen modifications need to be submitted to our office for review. Environmental Health staff, Leslie Bromberg and I, did a courtesy walk-through of your establishment on July 20, 2023,and noted the following issues that need to be addressed: • The entire kitchen-wash area needs to be enclosed with walls that are smooth, easily cleanable, and nonabsorbent. A ceiling is needed in the cooking area to keep animals from entering from above. Wall and ceiling height is to be determined based on proposed design. • Additional lighting will be needed in the cooking area, meat market area and wash area. You will need to specify lighting types and locations. Lighting will need to have unbreakable or shatterproof coverings. • Wall coverings must be completed in the wash area to a height of least 8 feet high up the wall. Must match the existing material;continuing FRP board would be ideal. No exposed wood below 8 feet. Anything over 8 feet will require a gloss paint. • Additional hand sink will be needed at the cooking area—the possible location was discussed during the courtesy walk-through. • The walls in the separate prep room area must be finished with a washable, nonabsorbent material. As discussed, either a hand sink must be placed in this location or a swing door replacing the fixed door entering the room. If a hand sink is placed in the kitchen area (on the side by the grill)it must be accessible without barriers. • If food side items are plated from the warmer out front, an additional barrier may be needed.This will be determined after assessing all processes of the food service. • Additional prep sink may be needed depending on washing/prepping of raw meats and vegetables. It can be placed in the wash area as discussed,with separation distance from hand sink 18 inches or greater. • Outside cooker area cooker could possibly need an additional overhang to help keep weather from entering from the side,especially if screening is used.Once plan review is completed,the determination of additional side covering can be discussed. LIVING. BETTER. • A 3ft x 3ft sloped to drain, with hot and cold water, wash can mop pad will be required. This must be plumbed into the septic system. • All above requirements must meet NC GS 130A-247, 15NCAC18A.2600 and 2017 NC Food Code as well as any other Environmental Health rules and requirements. • Final septic system approval is required prior to permitting as a food service establishment.This design will be based on the number of restaurant seats,other food service processes,along with other public activities proposed on site. Based on this preliminary list of issues that was discussed in the field,the next step in Environmental Health's review of your proposed restaurant requires you to submit an updated scaled drawing of the areas discussed above and any other area with proposed changes. Additionally, you must provide information on materials that you propose to use.Our office must approve all work and materials before work is conducted. Additionally, the Temporary Food Establishment ("TFE") permit for your establishment issued on August 2, 2023 expires September 9, 2023. You may request a one-time 15-day extension of the TFE permit, if the establishment continues to meet all permit requirements and applicable rules. North Carolina General Statutes and regulations prohibit the issuance of any additional TFE permits or extensions. You must complete the items listed above and obtain a food service permit prior to the expiration of the TFE in order to continue to operate as a food service establishment.
