Mr. McRae,
The grease interceptor we have in place is rated for 50 gallons per minute,
100 lb. of grease.
We presently check and clean out the contents on a monthly basis. When our
new kitchen goes into service we will begin checking the grease interceptor
every 2 weeks and having the contents professionally cleaned out monthly at a
minimum.
A record of these inspections and cleanings will be maintained in my office for
review by Utilities and Health Department officials.
