Foods are cooked in our restaurant, (Carolina BBQ Co. 602 Hwy 70 West, Hildebran, NC 28637) in Ole Hickory commercial smoker. Meats (pulled pork, brisket, ribs) are cooled then frozen. Foods are transported to event in our trailer inside walk in refrigerator. Trailer has power in transit by generator. B. All foods are warmed in Southern Pride commercial smoker. Then hot food is held in Southern Pride smoker or warming cabinet. We also use Cambro for short term holding. Cold foods are kept in walk in refrigerator. FESTIVAL ON-SITE : A. All equipment is kept clean by our staff. We use fans for fly control. Also we have screens when necessary. B. We clean and sanitize all equipment before and after each use. Also regularly during event. C. We have instant hot water (140 degrees) from propane hot water heater mounted on trailer. We connect to events water supply using white hose with pack flow prevention. We have 3 part stainless sink with a separate hand wash sink. Gray water is stored in tank under trailer. D. When available we rent a private Porta John. E. Garbage goes into our garbage cans and removed as needed each day of the festival. F. All of our employees understand and have signed the Employee Health Policy as required by the NC Food Code 2-201. We have several employees who have completed the ServeSafe Certification and they will be onsite during the festival. PURCHASING FOODS TO BE SOLD: We purchase all of our products from Performance Foods, Hickory, NC and from Reinhardt Foods, Johnson City, Tn. Performance & Reinhardt deliver to our restaurant on a weekly basis. MENU OF FOODS SERVED AT FESTIVALS: Includes Beef Brisket, Pork BBQ, Ribs, Chopped Chicken, Hot Dogs, Smoked Sausages, Baked Beans, Cole Slaw & buns — BEEF BRISKET: Purchased from Performance Foods or Reinhardt. Cooked on commercial smoker in our restaurant. Cooled, frozen, transported to event in refrigerator on trailer. Heated up on commercial smoker, held in smoker or warming cabinet. We only heat up as much as needed for the day. No cooling at the end of day. PULLED PORK: Purchased from Performance Foods or Reinhardt. Cooked on commercial smoker in our restaurant. Cooled, frozen, transported to event in refrigerator on trailer. Heated up on commercial smoker, held in smoker or warming cabinet. We only heat up as much as needed for the day. No cooling at the end of day. PORK RIBS: Purchased from Performance Foods or Reinhardt. Cooked on commercial smoker in our restaurant. Cooled, frozen, transported to event in refrigerator on trailer. Heated up on commercial smoker, held in smoker or warming cabinet. We only heat up as much as needed for the day. No cooling at the end of day. CHOPPED CHICKEN: Purchased from Performance Foods precooked from Hormel, transported to event in refrigerator on trailer. Heated up on commercial smoker, held in smoker or warming cabinet. We only heat up as much as needed for the day. No cooling at the end of day. HOT DOGS & SMOKED SAUSAGES: Purchased from Sam's Club in Hickory, precooked, and transported to event in refrigerator on trailer. Heated up on commercial smoker, held in smoker or warming cabinet. No cooling at end of day. BAKED BEANS: Purchased from Performance Foods in cans (Bush's). Heated up on commercial smoker, held in smoker or warming cabinet. We only heat up as much as needed for the day. No cooling at the end of day COLE SLAW: Made fresh in our restaurant. Transported to event in our refrigerator. BREAD: Brought to the Festival and purchased from our supplier (Flowers Bakery) or purchased at local supplier if needed.
